You can simply enjoy watching it all unfold or, if you're feeling like a good Samaritan, help an NPC in need, such as somebody who's being terrorised by a rowdy gang. The Explore mod
This mod from KawaiiStacie adds a bunch of rabbit hole actions—activities your Sims can do on their own without you following—that activate buffs or improve your Sims' relationships with those closest to them. Once your Sims have visited the DMV for a license or bus pass, you can send them exploring just by clicking on them, which brings up a radial wheel of options. You can send them shopping (they'll come back with new clothes), to dance classes, to local attractions, to gambling spots, to take on some part-time work, and more. Their skills and motives will change based on the activity you choose, and you can tell your Sim to "Explore With" another character if you want to improve relations.
Sims will also randomly explore if you don't intervene, which is neat. The mod works with the base game, but some options rely on specific packs: you can't send Sims for take-out ice cream if you don't own the Cool Kitchen Stuff pack, for example.
Meaningful Stories is a great mod pack that brings lively behaviors, believable emotional states and changes, moods that change based on environmental effects, and more.
The most important parts of the pack are two excellent mods called Emotional Inertia and True Happiness.
The first one fixes the wild and erratic ride that is Sims' mode swings. Instead of going from extreme happiness to clinical depression over the course of a couple of minutes Sims will gradually change their moods and emotions.
They will slowly change moods and will be able to stay in a certain mood for longer, like in real life.
True Happiness makes being happy a bit tricky. Instead of setting happy as the default mood the mod sets "fine" as your default state. In order to get happy you have to actually experience positive moments such as getting a raise at work, eating a great meal, maybe meeting someone new, and other stuff that make us happy in real life.
Other mods included in the Meaningful Stories package allow the environment to affect moods (living in the trash will make your Sim miserable, and renovating the house will make them joyous, etc.) as well as randomizing moodles.
This means that mood triggers hand randomized effects that can be stronger or weaker depending on a pure chance. Sometimes going to a date will make your Sim jump from joy; other times they will happy just a bit.

This small but handy mod expands the number of traits you can assign to your Sims. Instead of having to pick just three More CAS Traits returns the good ole' days of The Sims 3, allowing players to pick six traits and have a more varied personality.

College mod is great because your Sim actually goes to the classroom every day (it plays like a job) and once they get home some studying is needed in order to get good grades.
There are three majors to pick from - Physical Education, Fine Arts and Music - and on top of lectures, your Sim can also attend extra activities for even better grades. Each major comes with unique goals and activities.
The School mod works and plays similar only here you just go to the school and study.
No majors (which is logical), no extracurricular activities, just classes. Once you install the School mod make sure to have a new Elementary or High School in your neighborhood for the mod to work.
Become a Sorcerer
What if you want a truly unique career choice and school and college simply bore you? Well, you can always become a sorcerer! The Become a Sorcerer mod turns the Sims 4 into a land where magic exists and where you can cast spells and become a force of good or evil (depending on your choices).
You have the mana bar that empties when casting spells, you can aid or hurt other Sims with your spells, and your magical career starts once you touch a lump of clay and replace a certain number of needs with special, magical ones.
After that start casting spells, which then unlock new ones based on spells you cast and your magical (and moral) preferences.

Slice of Life is an interesting mod that introduces physical reactions to certain moods and emotions. Like in real life, when you Sim gets embarrassed their face will blush (and will also blush when they're flirting with someone), they will get tears in their eyes when sad, and their cheeks will turn red after a couple of glasses of wine.
